Cheesecake, in the usual sense of the word, came to us from American cuisine. Although historians say that even the ancient Greeks pampered their guests with a cold treat of cottage cheese, whipped with honey and flour. Our cheesecake with ricotta cheese is most similar to the Greek version. From Greece, the recipe immigrated to the Roman Empire, as a result of which eggs were added to the list of ingredients, and the dish itself began to be baked. The recipe took root in Europe and in each country it was altered in its own way and taste. For example, the Germans prepare a cheese pie based on quark—cottage cheese made from cow’s milk, which tastes and textures more like unsweetened yogurt. Italians make their cheesecakes based on ricotta and mascarpone, and according to the oldest English recipe, dry elderberry and rose water were added to the cheesecake.
 
From England, the cheesecake recipe came to the USA, where everything started spinning. It was like this: New York chef William Lawrence tried to copy French Neuchatel cheese and accidentally cooked a cream cheese, now known to us as Philadelphia. The cheese gained popularity, and years later, the famous Broadway restaurateur Arnold Reben made a pie based on cream cheese and shortcrust pastry, which instantly became a hit and was sold in the best restaurants in the city.
